Ready in 30 minutes, sake (Japanese rice wine) flavoured fried rice, great to share with others or alone on a cozy day in! This recipe would pair well with some gyozas (Japanese dumplings), edamame or even sunomono (Japanese cucumber salad).
Arborio rice
Of course it's better to use sushi rice for this recipe! I used what I had in my kitchen, which was arborio rice. It works well as it's short-grained rice like sushi rice.
Rice water
Reserve the rice water from washing the rice. Pour the rice water into a separate bowl for washing vegetables. Rice water can add minerals to your vegetables that's why!
Not using leftover rice
Not preparing leftover rice for the day of making this fried rice recipe would be fine! My tip would be to cook the rice an hour earlier before frying the rice and also to leave the lid open (when rice has been cooked) from the rice pot to decrease the moisture in the rice.
Marinating salmon
Taking the salmon out of the fridge at least 30 minutes before cooking would avoid a hard texture when it's cooked. Descale, cut into cubes then marinate with soy sauce, mirin, sake, white sugar and tapioca starch (substitute with cornstarch if you don't have tapioca starch!).

Ingredients:
1 cup arborio rice (substitute sushi rice)
2 salmons
2 tbsp soy sauce
2 1/2 tbsp sake
1/2 tbsp mirin
1 tsp sugar
1 tsp tapioca starch
2 tbsp lemon juice
4 cloves garlic
1 carrot
3 spring onions
2 eggs
Pinch of black sesame seeds (optional)
Method:
Boil arborio rice in a rice cooker or in a pot for 20 minutes. Leave rice cooker/pot lid open when rice is cooked.
Cube salmon then marinate them with 1 tbsp soy sauce, 1/2 tbsp sake, 1/2 tbsp mirin, 1 tsp sugar and 1 tsp tapioca starch.
Mince garlic, finely dice carrots and slice the spring onions. Beat 2 eggs.
In a pan under high heat, heat some vegetable oil. Fry diced salmon. Once the salmon become more cooked, break them up into smaller pieces. Switch the heat odd, pour some lemon juice on the salmon and set aside.
In a pan under high heat, fry minced garlic for a minute. Add in diced carrots and fry for a minute then add in spring onions. Mix all vegetables for 2 minutes and push them to one side of the pan. Add in beaten eggs to the other side of the pan and scramble. Mix evenly. Add in salmon pieces.
Mix in the cooked arborio rice, 1 tbsp soy sauce and 2 tbsp sake.
Sprinkle some black sesame seeds on top of the fried rice and serve.
