Avocado and salmon rice bowl

Salmon avocado lime rice under 30 minutes.

I added a touch of Thai fried shrimp paste which gave an extra spice to this rice bowl.

Would totally recommend this for lunch!






 

This recipe makes: 1 serving

Total time: 25 minutes


Ingredients:

1 Salmon fillet

1 Avocado

1/2 lime

Pinch of salt, pepper and paprika

1/2 cup rice (for one person)

Thai Fried shrimp paste (substitute with chilli flakes) •


Method:

1. Mix oil, salt, pepper and paprika with the salmon. Bake salmon for 10-15 minutes at 200C.

2. Boil rice.

3. Slice avocado and mix avocado slices with the baked salmon. Squeeze half a lime on to the salmon and avocado.

4. Top rice with salmon and avocado mixture. Sprinkle fried shrimp paste! Squeeze more lime juice if you’d like !
