Bibimbap

A not so traditional Bibimbap recipe. Bibimbap may look complicated to make as it has quite a handful of ingredients but fear not! It is quite simple! The variety of colours from the vegetables make this rice bowl healthy and filling.







After stir frying each ingredient, it helps to set them aside on a plate according to their groups


Tip: for a vegan option, substitute:

the soy sauce - tamari sauce.

the minced beef and egg - half a block of firm tofu sautéed in a tablespoon with tamari sauce.

The gochujang is a spicy paste and is what gives this rice bowl a Korean flavour. Thus, this ingredient is essential!






 

This recipe makes 2 servings

Total time: 30-45 minutes


Ingredients for the rice bowl


1 cup jasmine rice

1 zucchini

1 carrot

1 cup chestnut mushrooms

2 handfuls spinach

100g minced beef

2 eggs

3 tablespoons soy sauce

pinch of salt

pinch of pepper

2 tsp sesame oil

1 tbsp vegetable oil


Ingredients for the complete gochujang sauce

3 tablespoons gochujang

2 tablespoons soy sauce

2 tsp sesame oil




Method:

  1. Boil the rice in a rice cooker under the regular ‘white rice’ setting. . If you do not have access to a rice cooker, boil one part of the rice to two parts of water in a pot for 20 minutes with the lid on. During the last 2-3 minutes of boiling the rice, steam the spinach above the rice with a steamer basket.

  2. Marinate the minced beef with a pinch of salt, pepper and sesame oil.

  3. Slice the zucchini, carrot and chestnut mushrooms into thin strips.

  4. In a pan under medium heat, heat a tablespoon of oil. Fry the strips of zucchini, carrot and mushrooms separately with a tablespoon of soy sauce each.

  5. With all the vegetables set aside, fry the marinated minced beef for about 5 minutes until cooked through.

  6. Back to the pan, fry two eggs as sunny side ups.

  7. Top the rice with the steamed spinach and all of the stir-fried ingredients.

  8. Lastly whisk all of the ingredients of the gochujang sauce together evenly: gochujang paste, soy sauce and sesame oil.

  9. Drizzle the the sauce over the rice bowl.
