A Korean citron tea syrup was used as the main salad dressing and gave this salad an interesting, citrus flavour!
It's great to share with a group of friends of a family of 5 and plus, you can make this in just 20 minutes.

Korean citrus tea

In case you were wondering what the Korean citrus tea syrup looked like, it has a jam-like consistency. You can also find bits of orange skin inside.
Cutting melon
Once the melon is sliced in half, scoop the seeds out with a spoon.
Cut the skin off from the inside of the melon.
Tip - avocado, cucumber and melon cubes
Tip
Remember, in steps 3, 4 and 5, only mix the avocado, cucumber and melon cubes with the dressing. You'd want to avoid mixing the eggs and cherry tomatoes as they can get mushy.
Eggs
Alternatively, if you have multi-tier steamer, you can steam the whole eggs for 20 minutes with the cherry tomatoes and potatoes.

Enjoy it with a group with a salami & olive side On its own Or fill them inside the pocket of a pita
This recipe serves 5
Total time: 20 minutes
Ingredients:
18 baby potatoes
250g cherry tomatoes
3 eggs
1/2 galia/honeydew melon
1 cucumber
1 avocado
1 tbsp extra virgin olive oil
1 tbsp Korean citrus tea
Optional:
16 salami slices
1 cup of pitted green olives
4 whole pitta breads sliced in half
Method:
Slice baby potatoes in half and steam for 15 minutes. Steam the cherry tomatoes for 5 minutes.
Boil 3 eggs for 8 minutes. We'd want to make them hard boiled eggs. Once they have been boiled, peel the eggshells off and slice each egg in halves.
Cube the melon, cucumber and avocado then place them in a salad bowl.
Add in steamed potatoes and mix in the extra virgin olive oil evenly.
Mix in the Korean citrus tea and continue to mix all of the ingredients evenly.
Place the steamed cherry tomatoes and boiled eggs on top.
Serve with a salami & olive dish and a fill the pockets of pita breads with the salad.
