Meatball spaghetti from 'Lady and the Tramp'

Bella notte!

A version of the famous meatball spaghetti with a bit more vegetables! If you're looking to make the meatballs from scratch and just enjoy re-creating this scene or just want some meatball pasta, this recipe is for you!

You might want to add some extra parmesan cheese just like mine in a miniscule cup!







Meatballs

When shaping the meatballs, applying a bit more pressure at the palms of your hands while cupping the meatballs can help them build their shape.






After shaping, I placed the meatballs in the fridge for 30 minutes to firm them up. Placing them in the fridge is optional but would recommend so they can remain in tact!

Cooking method

I grilled them in the grill. However, frying is possible too. Fry the meatballs in oil on a pan while continuously turning them over.

Serves 3-5


Meatball Ingredients:

(makes 22)


576g minced beef

1 tsp oregano

1 tsp thyme

1 tsp rosemary

1 tsp salt

2 cloves garlic (minced)

1/2 panko breadcrumbs

Pinch nutmeg (optional)

pinch of pepper

1 egg


Sauce ingredients:

4 cloves garlic (minced)

1/2 white onion (chopped)

1 cup celery (diced)

1 tbsp tomato paste

400g (1 can) tinned tomatoes

3 stalks basil

1 tbsp balsamic vinegar


373g pasta (3-4 portions)


dried parsley (optional topping)


Method:

  1. Mix the minced beef with oregano, thyme, rosemary, minced garlic, nutmeg, panko breadcrumbs, salt, pepper and an egg. Take 2 tbsp of the mixture and rolls into a ball. You will end up with about 26 meatballs. Place the meatballs on a baking tray, cover with cling film and leave in the refrigerator to firm up for 30 minutes.

  2. Preheat the oven at 200C. Bake the meatballs for 30 minutes, flipping them halfway. Turn the oven fan on for the last 3 minutes of baking.

  3. Salt a pot of boiling water and boil the pasta. Save 3 cups of the pasta water.

  4. On a pan under medium heat, heat a tablespoon of olive oil. Sauté minced garlic, chopped onion and celery until the onions become translucent.

  5. Pour in the tinned tomatoes and 3 cups of pasta water. Once it boils, simmer for 5 minutes. Mix in the baked meatballs. Add in some balsamic vinegar and basil.

  6. Combine with the cooked pasta and there you go! Or sprinkle some dried parsley on top.
