Ingredients:
100g minced beef
2 vine tomatoes
4 handfuls spinach
1 small brown onion
2 cloves garlic
1 tbsp oyster sauce
1 tbsp dark soy sauce
2 tsp cornstarch
1 tsp sesame oil
pinch of Chinese five spice powder
1 cup jasmine rice
1 tbsp chia seeds (optional)
Method:
Boil the rice with chia seeds in a rice cooker under the regular ‘white rice’ setting. If you do not have access to a rice cooker, boil one part of the rice to two parts of water in a pot for 20 minutes with the lid on.
Slice the tomatoes, dice an onion and mince the garlic.
In a pan under medium heat, heat a tablespoon of oil. Fry the minced garlic and minced beef until the beef starts to brown.
Add the diced onions and tomatoes into the pan continue to stir fry for 3 minutes.
Mix in the oyster sauce, soy sauce and Chinese five spice powder.
Mix the cornstarch with 1/4 cup of water until it becomes a solution. Pour the solution into the pan and let it simmer for 5 minutes.
Add in the spinach into the pan and continue to mix with the other ingredients until the spinach wilts. Mix in the sesame oil.
Serve with rice.
