Prawn fried multigrain rice

Healthy fried rice with red rice added and prawns as the mains. Takes 15 minutes to cook and all ingredients can be prepped ahead of time!



This was more of a 'I have to finish off the vegetables I have left', 'I don't have garlic but yay I have a shallot to help' and 'I don't have enough oyster sauce so I will have to find another sauce that is thick and sweet' which resulted with hoisin sauce. Fried rice still possible!


Prawns

Devein the prawns! This will give less of a weird taste from the prawns.


Substitute meats

Chicken, beef, pork strips will work just as fine. Remember to marinate them for longer with light/dark soy sauce, sesame oil and cornstarch.


Substitute vegetarian version

Cube some tofu and marinate them in light soy sauce, sesame oil and cornstarch.


Rice

It's good to include some red rice as white rice alone can lead to high blood pressure.

Be sure to soak the red rice for at least 30 minutes in warm water or store in an airtight container filled with water in the fridge overnight.


Hoisin sauce

I used hoisin sauce because I ran out of oyster sauce - which is a staple for fried rice.

You can opt this out if you don't have it!

Dark soy sauce

This ingredients gives a nice brown colour and brings the saltiness to the fried rice!

Total time: 45 minutes

Serves: 4-5


Ingredients:

225g raw king prawns

Pinch of white pepper

1 tsp sesame oil

1 red bell pepper (diced)

1 orange/yellow bell pepper (diced)

1/2 red onion (chopped)

1 shallot (chopped)

1 medium zucchini (diced)

2 eggs (beaten)

2 cups white jasmine rice

1/3 cup red rice


2 tbsp dark soy sauce

2 tbsp hoisin sauce

1 tsp sesame oil

1 tbsp sesame seeds (optional)


Method:

  1. Soak red rice in water for 30 mins or overnight in an airtight container in the fridge. Once soaked, boil with white rice in a rice cooker.

  2. Devein prawns and marinate them in white pepper and sesame oil.

  3. In a pan under high heat, fry shallots and onions until soft.

  4. Add in prawns and stir fry until cooked.

  5. Add in the diced bell peppers and zucchini. Cook until water from the zucchini evaporates.

  6. Pour on beaten eggs to one side of the pan and scramble. Once scrambled, mix evenly with the rest of the ingredients.

  7. Add in cooked red and white rice then mix in the dark soy sauce, hoisin sauce and sesame oil in to the pan. After combining all of the ingredients, top with sesame seeds.
