Nourish bowls with the base of rice noodles.
A vegetarian and vegan friendly recipe.
This left me feeling fresh!!
This recipe makes: 2 servings
Total time: 20-30 minutes
Ingredients
2 servings rice noodles
1 cup green beans
1 red bell pepper
3 handfuls spinach
1 block firm tofu
1 tbsp soy sauce
2 tsp cornstarch
2 cloves garlic
1tbsp olive oil
1 lime
2 stalks fresh parsley (optional)
2 tbsp Thai fried shrimp paste (optional)
Method:
1. Soak rice noodles in hot water for 10-15 minutes until they soften.
2. Slice a red bell pepper, dice a block of tofu and mince garlic.
3. Marinate the tofu cubes with soy sauce, cornstarch and minced garlic.
4. Steam red bell peppers and green beans for 5 minutes. Add in the spinach to steam for the last 2 minutes.
5. In a pan under medium heat, heat 1 tablespoon of oil. Fry marinated tofu cubes for 4-5 minutes, making sure to continuously toss the tofu to avoid burning.
6. Assemble all the cooked ingredients together. Squeeze the juice from a lime all over then top with fresh parsley and Thai fried shrimp paste.
