Smoked salmon with avocado toast

It may look fancy and complicated but this only takes less than 10 minutes to make. The smoked salmon and feta cheese really compliment the savoury section of this recipe.




This recipe makes 1 serving

Total time: 8-10 minutes


Ingredients:

50g smoked salmon

1/2 avocado

1 salad tomato

50g feta cheese

4 sprigs fresh parsley

pinch of pepper

2 slices of sourdough toasts

1 tbsp olive oil


Method:

  1. Spread olive oil on each slice of sourdough toast then toast them on a pan under medium heat until crisp and light browned.

  2. Mash 1/2 of an avocado, slice a tomato, dice feta cheese and prepare slices of smoked salmon.

  3. On one slice of sourdough toast, spread the mashed avocado and top with smoked salmon slices, diced feta cheese and fresh parsley. On the other slice of sourdough toast, top with sliced tomatoes, smoked salmon slices, diced feta cheese and fresh parsley.

  4. Sprinkle a pinch of pepper on both toasts.
