Two ways sweet potato black bean burger patties

Have it in a sandwich or with couscous!

These patties came out really crunchy on the outside and smooth in the inside. I've done a few testings and the key of not making the patties not so mushy is not to go crazy with the oil when baking them in the oven.

Below I present to you two ways to incorporate these sweet potato black beans burger patties in to your meals. Both recipes use the same ingredients for the patties.

 





1. Sweet potato patties with couscous, cherry tomatoes, mashed avocado and spinach
















2. Sweet potato burger patties in a sandwich












 

This recipe makes 5 patties.

Total time: 1 hour


Ingredients for the sweet potato burger patties:

1/2 cup tinned organic black beans

1 sweet potato

1/2 red onion

1 cup oat flour

2 tsp Dried Herb mix (dried marjoram, basil, oregano and thyme)

Pinch of salt

Pinch of pepper

1 1/2 tbsp olive oil


Method:

  1. Dice one sweet potato into small Cubes.

  2. Steam the sweet potato cubes for 20 minutes. A fork should go right through the sweet potato cubes when they are cooked through.

  3. Rinse the canned black beans thoroughly with water.

  4. FINEly dice half of a red onion.

  5. Preheat the oven at 200C.

  6. blend the oats in a blender to form the texture of a flour. If you already have oats in the form of flour, skip this step.

  7. In to a bowl, add in the black beans, steamed sweet potato cubes, diced red onion, oat flour, mixed dried herbs, olive oil, a pinch of salt and pepper.

  8. Mix and mash all of the ingredients until they are evenly combined.

  9. Once all of the ingredients are evenly combined, scoop about 3 tablespoons of the mixture and shape them into patties. This should make about 5 patties. Rub an extra tablespoon of olive oil on to all of the shaped patties.

  10. Bake the sweet potato patties in the preheated oven for 30 minutes, flipping halfway to get an even crusted layer on each side of the patties.


Ingredients for sweet potato patties with couscous, cherry tomatoes, mashed avocado and spinach.


1/2 cup dried couscous

1/2 cup cherry tomatoes

1/2 avocado

1 handful of spinach

pinch of salt

Pinch of pepper

1 tbsp olive oil


Method:

  1. Preheat the oven at 200C.

  2. Slice cherry tomatoes.

  3. Coat the cherry tomatoes with a tablespoon of olive oil, a pinch of salt and pepper.

  4. Roast them for 15 minutes in the oven.

  5. Steam a handful of spinach for 2 minutes.

  6. In a bowl of couscous, pour hot water over the couscous and cover with a lid for the couscous to soak the water for 5 minutes.

  7. Mash half of an avocado.

  8. Assemble sweet potato patties with couscous, mashed avocado, steamed spinach and roasted cherry tomatoes.


Ingredients for sweet potato burger patties in a sandwich:


1/2 cup cherry tomatoes

1/2 red onion

2 slices of honey soaked seeded bloomer

1/2 avocado

1 handful of spinach

2 tbsp olive oil

Pinch of salt

Pinch of pepper

Pinch of dried parsley


Method:

  1. Preheat the oven at 200C.

  2. Slice cherry tomatoes and slice a red onion.

  3. Coat the cherry tomatoes and sliced red onions with a tablespoon of olive oil, a pinch of salt and pepper.

  4. Roast them for 15 minutes in the oven.

  5. Steam a handful of spinach for 2 minutes.

  6. slice each honey soaked seeded bloomer slice into half.

  7. spread a tablespoon olive oil onto both honey soaked seeded bloomer slices and toast them up in a toaster.

  8. Mash half of an avocado.

  9. Top each 1/2 slice of the toasted honey soaked seeded bloomer slices with a baked sweet potato patty, mashed avocado, roasted red onion slices, steamed spinach, roasted cherry tomatoes, a sprinkle of dried parsley and another 1/2 slice of the toasted honey soaked seeded bloomer.
