Apricot salad

Want to incorporate more fruits in to your salads? Try apricots. Apricots aren't as sweet as plums or bananas which make them a perfect balance with the sweet dressing used in this recipe.

Only 4 ingredients and can take as little as 5-10 minutes to make!






Korean citrus tea from K-eats

This is the main dressing I used for this recipe. Its jam- like texture and sweet citrus flavour adds the sweetness to this salad.

Flaked almonds

They add a crunchy texture to the salad.

Don't have almond flakes? Substitute with other types of chopped nuts such as walnuts or cubed cucumbers.


Spinach

The greens of this recipe.

Don't have the spinach? Substitute them with kale or even purple cabbage.


Apricots

Remember to de-seed the apricots!

Slice then turn the apricots to slowly de-seed them.




Serve it as a side

I served my apricot salad with some mac and cheese and bread. These are just ideas! Feel free to serve with other dishes such as pasta or just on its own!







 

This recipe serves 4-5

Total time: 5-10 minutes





Ingredients:

200g spinach

6 apricots

1/2 cup almond flakes

2 tbsp Korean citron tea

2 tbsp walnut oil


Method:

  1. Wash spinach and apricots. Slice apricots and de-seed them.

  2. Plate spinach then add apricots on top. Sprinkle almond flakes.

  3. Mix the Korean citron tea and walnut oil in a separate bowl. Pour on top of the apricot salad.
