Banana and mixed berries oats

The cozy breakfast for those winter days.

Oatmeal that is cooked on the stove top and best served warm.

Drizzle of peanut butter at the end to bind everything together.

extra topping of flaxseeds for more superfoods.


This is my favourite breakfast to have during the winter days and especially because of the natural sweetness of the banana and berries.





Smooth, drizzly peanut butter works well to have a drizzle on top.

I used Meridian's smooth peanut butter and their peanut butter is definitely one of the best natural nut butters I have had.


Of course, if your nut butter doesn't drizzle, it's alright to scoop a tablespoon and mix them up evenly with the other ingredients in the bowl.




Substitutes:


Almond milk

  • any other nut milk (if vegan) or regular milk

Peanut butter

  • any other nut butter

rolled oats

  • any other oats such as steel cut oats, quick cooking oats and so on

fresh blueberries

  • frozen blueberries or other frozen berries. Buy frozen berries in bulk to save more money.


 


This recipe makes 1 serving

Total time: 5-10 minutes


Ingredients:

1/2 cup rolled oats

1/2 cup water

1/2 cup almond milk

2 tsp chia seeds

1 tsp cinnamon

1 banana

1/4 cup of frozen blueberries

1 tbsp peanut butter

2 tsp flaxseeds


Method:

  1. Mash half of a banana and slice the other half. In a pot under medium heat, boil the oats in water. Once the oats have soaked up the water, add in cinnamon, chia seeds, mashed banana and almond milk. Mix and let it simmer for 1-2 minutes or until it thickens to your desire.

  2. Switch the heat off.

  3. Top the oats with the sliced bananas, frozen berries, flaxseeds and peanut butter.
