For the coffee lovers who want extra coffee and more in their waffles
Great, simple breakfast with just a waffle maker and the baking essentials! Only takes 20 minutes so whip these waffles up with the recipe below.
These coffee waffles are similar to the mini almond waffles recipe (linked below), but with the addition of coffee granules.
Coffee granules
I used Clipper's Latin American Decaf Organic Instant Coffee for this recipe. You can find this in most Sainsbury's supermarkets (if you are in the UK). Equally, here is a direct link if you want to buy from them:
Clipper's coffee granules don't leave you feeling 'jittery' after drinking and it immediately smells like good coffee even when it isn't heated up yet! Feel free to use any type of coffee granules whether it be espresso/americano granules etc.
Sweetness
As we were going for coffee all the way, a vanilla coffee syrup was used on the waffles.
You won't have to use this specific syrup as the usual maple syrup will do.
Cane icing sugar is an optional sweetener and adds extra sweetness beside the syrup. Opt this out if you don't have cane icing sugar.
Toppings
Minimal ingredients were used: pumpkin seeds, cane icing sugar and vanilla syrup.
To fancy it up, add any choice of fruit/coconut flakes/almond flakes on your waffles!
Waffle maker
I used Giles & Posner's mini waffle maker 15 (l) x 10.5 (w) x 22.4 (h) cm.
Once the batter was in and the lid closed, the red light will turn on. After the red light turns off, it signals that the waffles are done cooking.
Total time: 20 mins
This serves 3-4 people
Ingredients:
1 tsp coffee granules
1 cup Plain flour
1 tbsp Corn starch
1 tsp Baking powder
1 tsp Baking soda
¼ tsp Cinnamon
¼ tsp Salt
½ cup Milk
½ tsp Vanilla syrup
½ tsp Vanilla extract
1 tbsp Olive oil
Optional:
drizzle of coffee syrup
cane icing sugar
pumpkin seeds
Method:
Mix the dry ingredients (coffee granules, plain flour, corn starch, baking powder, baking soda, cinnamon and salt) together.
Combine the wet ingredients (milk, vanilla syrup, vanilla extract and olive oil) together with the dry ingredients.
With your waffle maker, pour in 1 1/2 tbsp of batter and close the waffle lid. Cook for about 5 minutes.
Sift in some cane icing sugar, sprinkled some pumpkin seeds and drizzle vanilla syrup on top of the waffles.
