Crunchy banana granola

Oil-free granola with natural sweeteners.

These turned out super crunchy when baked in the oven! Be sure to flip them every 15 minutes to avoid burnt granola clusters!


You know they're crunchy clusters when they are lightly browned!

This is definitely great for a budget friendly granola breakfast and it is better than store bought granola as there won't be artificial additions in the recipe.

Make them in batches and have them throughout the week!


The use of a ripe banana

A ripe banana will be easier to mash and will provide a natural sweetness to the granola.


 

This recipe makes 8 servings

Total time: 45-60 minutes



Ingredients

4 cups rolled oats

4 ripe bananas

1/2 cup peanut butter

1/2 cup pure maple syrup

8 tsp cinnamon

1 1/2 cup mixed raisins and nuts (almonds, cashews, walnuts, peanuts and brazil nuts)


Method:


  1. Preheat the oven at 160C.

  2. in a bowl, mash the bananas. Mix in oats, peanut butter, maple syrup, cinnamon, mixed nuts and raisins until evenly combined.

  3. Transfer to a baking dish and bake at 160C for 40-45 minutes. Toss the granola every 15 minutes to make sure the granola do not burn.

  4. Top the baked granola with more sliced bananas and yoghurt or milk of your choice.
