Festive matcha pancakes

Yes it's quite early for these christmas-looking pancakes but the combination of fruit that I included in this recipe made it look festive. These will look like a tree and fruit on them!


Top them with baby kiwis and pomegranate seeds.




Or even sliced bananas.










Spread some peanut butter if you're missing your pb !








The green colour in the pancakes: I used Bulk powder's Matcha powder.

Gives a natural kick of caffeine too.






 

This recipe makes 1-2 servings

Total time: 10-15 minutes


Ingredients:

1/2 cup plain flour

1 tsp baking powder

1 tsp matcha powder

1 tsp cinnamon

1/8 tsp salt

1/2 cup almond milk

1/2 tsp almond extract

1 tbsp avocado oil

4-6 baby kiwis

2 tbsp pomegranate seeds

1 medium banana (optional)


Method:

  1. In a bowl, sift in plain flour, baking powder, matcha powder, cinnamon and salt. Pour in the almond milk and almond extract. Whisk all of the ingredients together until the batter is evenly combined.

  2. In a pan under medium heat, melt a tablespoon of avocado oil.

  3. Pour 2 tablespoons of the batter into the pan for each pancake. Once bubbles start to appear on top of the pancake, flip the pancake over and fry for another minute.

  4. Top pancakes with sliced baby kiwis, pomegranate seeds and sliced bananas.
