Gochujang egg and feta burrito

Your breakfast burrito with a little bit of spice! Ready in 5 minutes.

I experimented with spicy sauces and drizzled ‘Gochujang’ (Korean spicy fermented condiment) on top. This recipe could be eaten as a breakfast taco without folding the wrap but for a burrito, make twice the amount of filling inside.


The finished product!

The inside: scrambled eggs, feta and seasonings

Total time: 5 minutes


Ingredients:

1 wholewheat tortilla wrap

1 egg

1 tbsp olive oil

1/2 cup feta cheese

1 tsp Gochujang

Pinch of salt

Pinch of pepper

Pinch of dried parsley (optional)


Method:

1. Beat an egg and crumble feta cheese. 2. Drizzle olive oil into a pan under medium heat. Pour in beaten egg and then scramble. 3. Top a wholewheat tortilla wrap with the scrambled eggs and feta cheese. Add a pinch of salt, pepper and parsley. 4. Spread Gochujang on top.
