Similar to bruschetta but the focus here is more on the tomatoes being cooked with aromatic herbs. Quick and easy appetiser for all your guests!
Eataly's Extra virgin olive oil
I mixed in Eataly's extra virgin olive oil flavoured with aromatic herbs into the tomato mixture after it was cooked. This added more spice and just finished the mixture off with a mixture of tastes!
I recommend buying this olive oil as it's been flavoured and great to add into pastas/salads if you want more spice.
Prepping ingredients
Go ahead and use fresh basil if you don't have access to dried basil!

This makes 4-6 servings

Ingredients:
391g baguette (large baguette)
330g cherry tomatoes
2 handfuls spinach
2 tbsp dried basil
1 cup chopped ham
1 tbsp Eataly's extra virgin olive oil with aromatic herbs (optional)
1/2 tsp salt
1/2 tsp black pepper
1 tbsp of dried parsley
Method:
Chop up spinach and ham into smaller pieces. Quarter all cherry tomatoes and mix them with 1/2 tsp each salt and pepper.
Heat a pan with 2 tbsp olive oil. Pour in cherry tomatoes and fry for 5 minutes. When the liquid of the tomatoes start to evaporate halfway, pour in spinach and 2 tbsp dried basil. Mix and simmer for another minute. Mix in chopped ham and then turn the heat off.
Pour in Eataly’s extra virgin olive oil, pinch of salt and pepper. Combine the mixture evenly.
Slice a large baguette and toast each slice.
Place 1-2 tsp of tomato mixture on each slice. Sprinkle dried parsley on each slice and serve.
