Kimchi pancake

A Korean snack or side dish. 20 minute spicy snack or side dish into your day!

I was inspired by Maangchi's (here is her website: maangchi.com) cooking and I thought I could make this kimchi pancake again. I agree with her that eating this kimchi pancake on a rainy day would feel cozy and fun with your family.


Ready made kimchi

I used Bibigo's ready made kimchi for this kimchi pancake and I realised their kimchi is quite orange! It's already sliced so you won't have to chop it up further

Non-stick frying pan

I recommend using a non-stick frying pan when making a kimchi pancake as it makes the cleaning process easier and it would avoid your batter from ever sticking to the bottom of the pan. For 2 whole pancakes, use a 9" non-stick frying pan like I did.


Measuring and prepping

Measure the amount of each ingredient according to the ingredient list to make the mixing tidier and to have an even consistency for the pancake.

Adding more oil in between frying

I added a tbsp more of vegetable oil when frying the other side to make the pancake crispier. Here's how I did it.



Black sesame seeds

These are optional but makes your kimchi pancake ready for a presentation!

 

This recipe makes 2 big pancakes (with a 9" non-stick frying pan)

Total time: 20 minutes



Ingredients:

1 cup kimchi

1/2 cup flour

10 chives

1/4 small purple onion

1/2 cup water

3 tbsp vegetable oil

Pinch of black sesame seeds (optional)


Method:

  1. Prepare all dry ingredients. Chop the chives into1inch sticks, dice a small onion and chop up kimchi if their length is long.

  2. Mix all the dry ingredients and pour in water. Continue to mix evenly.

  3. In a 9" non-stick frying pan, heat 2 tbsp of vegetable oil under high heat. Pour half of the batter on to the pan and spread the batter so that they cover the whole base of the pan.

  4. Fry for about 3-5 minutes then flip it over onto the other side and fry for about 3 minutes. Add a tbsp of vegetable oil beneath the pancake to make the pancake crispier (for more details, refer to the video above). Each should end up being golden brown.

  5. Top the pancake with a pinch of black sesame seeds and serve.
