Lemon and dill avocado toast

Amp up a simple avocado toast with a squeeze of lemon and dill

Only takes 10-15 minutes to make!

I find that this herb leaves a peppery and herby touch to this avocado toast.


Vegan options

I have 2 ideas for this! Omit the eggs or replace the eggs with some baked chickpeas.

Scrambled eggs give an extra creamy texture to this recipe.

This recipe serves 1

Total time: 15 minutes


Ingredients:

2 multi-seeded sourdough toasts

1 medium avocado

2 stalks of dill

1/2 lemon

Pinch of salt and pepper

2 eggs (optional)

1 tbsp butter


Method:

  1. Toast up 2 multi-seeded sourdough toasts.

  2. Mash an avocado and spread on the toasted sourdough toasts.

  3. Beat two eggs. Melt butter on a pan and scramble eggs.

  4. Place scrambled eggs on top of avocado toasts followed by dill, salt, pepper and lemon juice.
